Carrot and Seaweed Salad

Combine the following ingredients:

5 grated carrots
2 celery sticks (thinly sliced)
¼ cup currents or golden raisins
2 tbs. nori flakes
1 tsp. dulse flakes
1 tbs. ginger, grated (or pickled)

Liquid ingredients:
rice vinegar
sesame oil
toasted sesame oil
tamari
A pinch or two of organic sugar

Lightly coat the ingredients with a few splashes of rice vinegar, sesame oil, toasted sesame oil, and small dash of tamari. Toss and serve.
